After a cold freezing day, I was craving some hot chicken noodle soup. Not the canned stuff, the good stuff: homemade chicken noodle soup!
INGREDIENTS:
3-4 Cooked Chicken Breast (you can use a Rotisserie Chicken, I did!)
1/2 Cup Red Onion
1+ Cups Carrots (any kind works)
3-4 Garlic cloves
Handful of Parsley
1+ Cups Celery
4-6 Sprigs Thyme
1/2 Lb. Egg Noodles
3 Bay Leaves
Chicken Broth (x2)
Chop up the carrots, celery, red onion, garlic, & thyme. Add them into a large pot.
Pour Chicken Broth into the pot, add Bay Leaves & Parsley, bring it to a boil.
Wait for it to boil!
Once it begins to boil, add the chicken, egg noodles, & parsley. Cover the pot & let it simmer for 10 minutes or until noodles are tender.
So easy & delicious!! Enjoy!!
